Easy lunch idea: tomato and parsley tarts

Makes 4

You will need:
375g of pre-made puff pastry 
Soft cheese/Philadelphia 
10 cherry tomatoes
Handful of parsley
Black pepper

1. Start by finely chopping your parsley.
2. Slice your cherry tomatoes into halves. 
3. Roll your pastry out and cut into 4 equal quarters.
4. Take your soft cheese and spread evenly on all quarters, make sure you spread right to the edges.
5. Place one quarter onto a baking tray lined with baking parchment. Sprinkle the parsley over the top and add 5 halves of cherry tomatoes. 
6. Fold over the edges of the pastry quarter like the image below.
7. Do this for every pastry quarter.
8. Once you have all four quarters on the baking tray, grind some black pepper over all of them.
9. Put in the oven at 200 degrees for ten minutes.
10. Enjoy either hot or cold!
