Fruity Habanero inspired salad!

Serves 2

In order to make this salad you will need:
Cherry tomatoes x10
Sweet potatoes x2
Stringless beans x4
1/3 block of Feta cheese
Baby gem lettuce x2
Wahaca Fruity Habanero sauce

Step 1
Cut up your sweet potatoes into chunks, add to a baking tray and drizzle in olive oil. Roast in the oven for 30 minutes at 200 degrees.

Step 2
Cut the stringless beans into 1 inch pieces and steam for 5 minutes – you want them to retain the crunch.

Step 3
Use a herb chopper to shred your baby gem lettuce.

Step 4
Dice your cherry tomatoes into 1cm pieces.

Step 5
Add the lettuce, beans, sweet potatoes and cherry tomatoes to a bowl and mix.

Step 6
Sprinkle over the feta cheese.

Step 7
Drizzle the Fruity Habanero sauce over. It is quite hot, so be careful!

And that's it! Simple! Let me know if you make it, and I'm sure you could use mango chutney or a sweet chilli sauce as an alternative to the Fruity Habanero sauce.

As always, thank you for checking out my blog!
